Smoked Couscous Salad

  • 2 cup Water
  • 2 cup Couscous
  • 1 1/2 teaspoon Salt
  • 1 Medium Red Onion
  • 2 Large Tomatoes
  • 1/4 cup Raisins
  • 1/4 cup Pine Nuts or Chopped Almonds
  • 2 Lemons, juiced
  • 1/2 cup Castillo de Canena Smoked Olive Oil
  •  Salt and pepper to taste
  •  Mint and Small sliced Cucumbers for garnish (optional)

In a medium saucepan heat the two cups of water to boiling, then remove from heat and add couscous and salt.

Stir briefly then cover and let stand for 10 minutes. Fluff with a fork and set aside.

Chop the red onion and tomatoes and mix with the raisins and pine nuts in a medium bowl. Add the couscous to the mixture and dress with the lemon juice and Castillo de Canena Smoked Olive Oil. Salt and pepper to taste, and garnish with mint and cucumbers before serving.
