Sunbutter Banana Muffin Recipe

  • 1 1/2 cup All-Purpose Flour
  • 2 teaspoon Baking Powder
  • 1/2 teaspoon Kosher Salt
  • 3 each Large Eggs
  • 6 tablespoon Sugar
  • 6 tablespoon Canola Oil
  • 2 teaspoon Pure Vanilla Extract
  • 1/4 cup Low-Fat Milk
  • 1/4 cup Natural Sunbutter
  • 1 cup Mashed Bananas (about 3 medium bananas)
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Cinnamon

Preheat oven to 350 degrees. Line 12 standard muffin cups with paper or spray well with non-stick cooking spray.

In a mixing bowl whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

In another large mixing bowl whisk together the eggs, sugar, oil, vanilla, milk and Sunbutter until well combined and smooth.
Add the flour mixture and whisk to combine. Stir in the bananas.

Divide the mixture between the prepared muffin cups and bake for 25-30 minutes or until risen and golden brown.

Let cool in the pan, and serve warm or at room temperature.
