We start with whole brisket that is then trimmed, rubbed with our "Secret Brisket Rub" and smoked with hickory and oak wood for 8 - 10 hours. Then we take the "point" of the brisket, cut it into cubes and smoked for another 2 hours for that delicious heavily smoked flavor.
