Premium quality, ocean-caught wild Alaskan canned salmon. One of the most valuable and abundant of the Alaska salmon, sockeye have a deep, red flesh. The meat retains its color to a higher degree than other salmon when cooked or processed. They are a relatively fatty fish, yet have a firm flesh as well as a full, rich flavor. Ocean caught or 'bright sockeye' are a deep greenish-blue on the top of the head and back (hence blueback) and silver on the sides with a white belly. 'Fancy Blueback' is the best grade of red salmon.
